Must-try Cheese Wheel Pasta in Florence ft. Osteria Pastella

When it comes to authentic Italian cuisine, few dishes can rival the exquisite simplicity and rich flavors of freshly made pasta. On our recent visit to Osteria Pastella, we indulged in an unforgettable experience, savoring their renowned Truffle Tagliatelle served in a cheese wheel. This dish, priced at €27 per portion, sits on the higher end of the spectrum.
The anticipation built as we watched the chef prepare our Truffle Tagliatelle. The process began with silky, house-made tagliatelle, cooked to al dente perfection. The pièce de résistance was the cheese wheel—an enormous wheel of Parmigiano Reggiano, aged to develop a deep, nutty flavor.
Our eyes widened in awe as the chef skillfully mixed the hot pasta in the hollowed-out cheese wheel, allowing the heat to melt the cheese and coat every strand of tagliatelle with its creamy essence. The grand finale was the addition of freshly shaved truffle, infusing the dish with its distinctive earthy aroma.
We also tried the following dishes:
(1) Tortelloni stuffed with ricotta cheese and spinach, butter and sage sauce and pecorino from Pienza
(2) Pappardelle with local wild boar meat marinated in Chianti wine, pine nuts and pecorino from Pienza
(3) Flambé tagliatelle with fresh truffle in Grana Padano cheese wheel (
(4) Roasted duck breast, duck thigh terrine paté, peppers and ricotta
