Dorayaki どら焼き
Dorayaki is a popular Japanese confectionery, that is also known as, Japanese red bean pancake. The pancake itself is quite easy to make and doesn’t take up too much of my time! After approx 20 min later, a plate of freshly made warm, soft and fluffy dorayaki is ready to be devoured with my homies! Check out my recipe below!

Dorayaki (pancake)
- 2 Large eggs
- ¾ cup All-purpose flour
- 25 g Sugar
- 1 tbsp Honey
- 2 tsp Water
- 1 tsp Vanilla extract 1
- 1 tsp Baking powder
Filling
- 1 cup Azuki beans
- ½ cup Sugar
- ½ tsp Salt
Red bean paste
Boil 1 cup of Azuki beans over medium-high heat for the next 1 hour. Keep adding water when the water evaporates to keep the beans submerged.
Drain the beans and blend them in a food processor into a fine paste.
Transfer the red bean paste into a pot.
Add 1/2 cup sugar (in two rounds) and 1/2 tsp salt and continue to stir the mixture for 15 minutes.
Dorayaki - pancake
Add 2 eggs, 25g sugar, 1 tbsp honey, 1 tsp vanilla extract into a mixing bowl and stir thoroughly.
Sift ¾ cup all-purpose flour and 1 tsp baking powder on top of the batter from Step 5 and mix gently.
Add 10ml water to the batter and whisk it until it thickens.
Let it rest for 15 minutes.
Add 3 tbsp batter onto a frying pan over low heat ('1' on the electric hob) for 5 minutes (to produce a piece).
Repeat this for 4 times to get 4 pieces.
Spread out red bean paste generously over 1 side of the pancake.
