Healthy Banana Cake

Made this classic quarantine bake - “Banana cake stuffed with blueberries” using bread tin. It’s so moist, soft and fluffy - and I definitely had too many slices as it is seriously good & addictive.... best served as a warm breakfast with a cup of hot drinks of your choice! Ingredients
  

  • 300 g Bananas
  • 80 g Unsalted butter
  • 2 Large eggs
  • 5 g Baking powder
  • 200 g Cake flour
  • 2 Bananas
  • 30 g Sugar

Method
 

  1. Add 300g bananas into a mixing bowl and use a fork to press them against the bowl (mash bananas). 
  2. Add 70g melted butter, 2 large eggs, and 30g sugar into a mixing bowl and whisk them.
  3. Sift 200 g cake flour and 5g baking powder on top of the batter and stir it until the mixture becomes sticky. 
  4. Line a rectangular cake tin with baking paper.
  5. Pour the 'mixture' from Step 4 into the cake tin.
  6. Slice 2 bananas in half and place them on top of the batter. 
  7. Bake your banana cake in the oven preheated to 180 °C for 45 minutes.
