Healthy Banana Cake
Made this classic quarantine bake - “Banana cake stuffed with blueberries” using bread tin. It’s so moist, soft and fluffy - and I definitely had too many slices as it is seriously good & addictive.... best served as a warm breakfast with a cup of hot drinks of your choice! - 300 g Bananas
- 80 g Unsalted butter
- 2 Large eggs
- 5 g Baking powder
- 200 g Cake flour
- 2 Bananas
- 30 g Sugar
Add 300g bananas into a mixing bowl and use a fork to press them against the bowl (mash bananas).
Add 70g melted butter, 2 large eggs, and 30g sugar into a mixing bowl and whisk them.
Sift 200 g cake flour and 5g baking powder on top of the batter and stir it until the mixture becomes sticky.
Line a rectangular cake tin with baking paper.
Pour the 'mixture' from Step 4 into the cake tin.
Slice 2 bananas in half and place them on top of the batter.
Bake your banana cake in the oven preheated to 180 °C for 45 minutes.
