Method
Outer-skin
- Add 150g all-purpose flour, 75g honey, 30g vegetable oil and a pinch of salt to a large mixing bowl.
- Stir it until the dough begins to hold together in a ball.
- Use a cling film to cover the top of the mixing bowl and rest the dough for 1 hour.
Filling
- Divide 450 of red bean paste into small portions (each of which should weigh 35g) and roll it into a ball shape.
Combination of filling & dough
- Pull a small portion of dough (should weigh 15g) and roll it into a ball shape.
- Press the dough ball against your palm to produce a flat layer.
- Wrap one lotus paste ball within the flat layer and seal it.
Final Steps
- Pat some flour gently onto the dough ball and knock out the excess flour.
- Place it under a mooncake mold and press it firmly to stamp the mooncake.
- Bake the mooncakes in the oven at 200 degrees for 5 minutes.
- In a small bowl, add 1 tbsp of water and 1 egg yolk and mix it gently.
- Take out the tray of mooncakes from the oven and brush the mixture onto the mooncake surface.
- Bake the mooncakes in the oven at 160 degrees for another 5 minutes and repeat steps 5.
- Bake it up until you’re satisfied with the colour!
