Have you ever had too many overripe bananas sitting on your cupboard? If so, DO NOT throw them away, you can easily use them to bake a healthy and delicious banana cake or banana loaf.

At some point in my life, my social media feeds have been flooded with banana cake produced by all kinds of bakers (be it amateur or avid) as people have been trying to fill their time with some baking activities during the lockdown. These are one of the easiest cakes for you to make at home, especially for a beginner.

This classic quarantine bake is so moist and fluffy and they can be frozen. Happy baking!

Healthy Banana Cake

Made this classic quarantine bake – “Banana cake stuffed with blueberries” using bread tin. It’s so moist, soft and fluffy – and I definitely had too many slices as it is seriously good & addictive…. best served as a warm breakfast with a cup of hot drinks of your choice! Ingredients
  

  • 300 g Bananas
  • 80 g Unsalted butter
  • 2 Large eggs
  • 5 g Baking powder
  • 200 g Cake flour
  • 2 Bananas
  • 30 g Sugar

Instructions
 

  • Add 300g bananas into a mixing bowl and use a fork to press them against the bowl (mash bananas). 
  • Add 70g melted butter, 2 large eggs, and 30g sugar into a mixing bowl and whisk them.
  • Sift 200 g cake flour and 5g baking powder on top of the batter and stir it until the mixture becomes sticky. 
  • Line a rectangular cake tin with baking paper.
  • Pour the 'mixture' from Step 4 into the cake tin.
  • Slice 2 bananas in half and place them on top of the batter. 
  • Bake your banana cake in the oven preheated to 180 °C for 45 minutes.
