What is Daifuku Mochi?

Daifuku or Daifuku mochi is a kind of Japanese sweets (a.k.a. wagashi). It is a stuffed mochi, consisted of, various fruits (commonly filled with strawberries) and sweet red bean paste (anko). Daifuku is my favourite Japanese snack of all time. It is best served with a warm cup of green tea.

It’s definitely a trend for the homemaker to make daifuku mochi at home. Again, you only need to take less than half an hour to make a whole batch of daifuku mochi! You can later keep the mochi in the fridge and enjoy for a whole week.

Extremely regretful for not getting myself any mochi dessert from the new mochi bar at @japan.centre ; I decided to replicate this at home and made a few batches of strawberry 🍓mochi (daifuku) at home. Honestly, it is one of the beginner’s friendly dessert😉 and doesn’t require much skills to make a beautiful red bean mochi! If I can do it, you can too! ❤️

Daifuku Mochi

Daifuku 🍓 mochi 草莓大福

I decided to replicate this at home and made a few batches of strawberry mochi (daifuku) at home. Honestly, it is one of the beginner’s friendly desserts and doesn’t require many skills to make a beautiful red bean mochi! If I can do it, you can too!

Ingredients
  

  • 120 g Glutinous rice flour
  • 80 g Potato starch
  • 450 g Red bean paste
  • 180 g Water
  • 30 g Sugar

Instructions
 

(Mochi making)

  • Add 120g glutinous rice flour, 80g potato starch and 180g water into a mixing bowl.
  • Mix everything until it thickens.
  • Cover the surface of the mixing bowl with a cling wrap & microwave it for 2.5 minutes (in total) at full power. Make sure to take ur mixing bowl out from the microwave every 30 seconds and stir it.
  • Transfer the mixture out from the bowl onto a large surface (sprinkled with flour to prevent sticking onto the surface).
  • Divide your huge mochi mixture into 6 pieces.

Strawberry red bean filling

  • Clean the strawberry and slice off the green part.
  • Scoop the red bean paste (could be homemade or ready-made) into a round shape.
  • Use the tip (bottom) of the strawberry to press it against the red bean ball.
  • Slowly mold the red bean paste such that it covers all parts of the strawberry.

Combine!!

  • Press the mochi mixture using ur palm to expand it such that it could cover and wrap the whole strawberry red bean fillings.
  • Fold 4 sides of the mochi skin and twist it on top when the 4 sides meet to seal it.
  • Refrigerate for 15~20 min before u cut it into half for photography purposes!
